What's the difference between the two modes?

"Remove all" collapses every line break into a space, producing one continuous block of text. "Preserve paragraphs" keeps blank-line paragraph breaks intact and only removes the single line breaks within a paragraph — useful for text that wrapped mid-sentence.

Will this affect line breaks inside quoted text or code?

It processes the whole input as plain text, so yes — it doesn't distinguish prose from code or quotes. For structured content, extract just the prose section first.
