What does the error correction level do?

It controls how much of the code can be damaged or obscured (e.g. by a logo overlay) while still scanning correctly. Higher levels (Q, H) tolerate more damage but produce a denser, more complex code for the same data.

Is there a limit to how much text I can encode?

Yes — QR codes have a maximum data capacity that depends on the error correction level, roughly a few thousand characters at most. Very long text will fail to generate; shorten it or lower the error correction level.
